Here's what you'll need to make this simple artichoke dip:
- Artichoke hearts
- Mayonnaise
- Sour cream
- Dried oregano
- Garlic powder
- Grated Parmesan cheese
- Bread bowl (optional)
Homemade Mayonnaise for Artichoke Dip
To make mayonnaise at home, you need only a few ingredients: A cup of oil, a normal-sized egg, a tablespoon of vinegar, salt, and a clove of garlic for flavoring.
- Place the whole egg in the blender, and beat at high speed for about three minutes, until the egg turns into a light-yellow foam.
- Without stopping beating, add the oil, little by little, forming a thread. As it falls, the mayonnaise will emulsify and take the final consistency.
- Turn the blender off for a moment, add salt, a little vinegar, and garlic if you wish.
- Beat one more minute and voila!
If you choose to make artichoke dip with homemade mayonnaise, you can also add an artichoke heart to the blender to intensify the flavor.
What Artichokes To Use For Artichoke Dip
I used canned artichokes for this recipe. The flavor of canned artichokes is very similar to the flavor of fresh artichokes and saves you at least an hour of hard work.
If you really want to use fresh artichokes, here's what to do:
- The first step is to wash the artichokes with a brush under running water.
- Cut the stem off of the artichokes.
- Once you've cut the stem, tear off a layer of small, tough leaves that are attached to the stem. With kitchen scissors, cut all the sharp tips of the blades.
- Cut the artichokes crosswise and with a spoon extract the hairy portion of the heart that is in the center of the artichoke.
- Sprinkle with a few squeezes of lemon.
- Cook the artichokes in plenty of water for about 40 minutes until they are tender.
- Drain and cut into chunks.

How to Make Artichoke Dip With Mayo
Step 1: Gather your ingredients.
Step 2: Make your bread bowl.
With a sharp knife, cut a hole in a round loaf of bread (sourdough works great), extract the middle piece of bread. With a spoon, remove as many bread crumbs as possible.
Step 3: Chop up the artichokes.
Drain the excess liquid from the canned artichokes if using. Place them on a cutting board and slice them into small, even-sized pieces. The dip will look better if the cuts are even.
Step 4: Stir the ingredients vigorously.
In a mixing bowl, place the mayonnaise, sour cream, oregano, and garlic powder. Stir vigorously for a few minutes until all the ingredients are well mixed.
Add the artichokes into chunks and beat some more. Taste the dip, and if necessary, add a pinch of salt.
Step 5: Pour the dip inside the bread and add the Parmesan cheese on top.
Step 6: Broil the bread in the oven for about 5 minutes (watch it closely!)
When you see the top of the bread brown, remove the bread from the oven.
